
This is a classic meal that the family enjoys and they are a big fan of sweet potatoes fries. In addition, they have to be fried in the deep frying pan and not roasted.
I adapted them slightly by adding the herb thyme to them. They tasted so amazing! The thyme adds another dimension to the slightly salted flavour. As well as this, I created a marinade for the Cajun chicken and left it for longer than usual. It makes a difference to the flavour.
Moreover, I managed to make a garlic mayonnaise as a dip and a salad which complementer each other. This is a great meal to have when the family come over or just a couple of you.

Serves: 4 people
Ingredients
-1 tsp crushed pepper
-2 tsp Cajun seasoning
-1 tsp chilli powder
-1 tsp Cayenne pepper
-1 tsp parsley
-1/2 tsp cornflour
-6 tsp brown sugar
-100ml lemon juice
-500ml orange juice
-1 pack of chicken leg and thighs
-2 tsp Garlic paste
Serve with sweet potato fries and garlic mayonnaise dip or avocado dip.

Instructions
Combine all of dry ingredients and mix well.
Add the lemon and orange juice and stir the marinade.
Put the chicken wings in the marinade and leave for a few hours.
Peel and chop the sweet potatoes into fries.
Place the chicken wings into a frying pan on a medium low heat.
Fry in batches until golden brown.
Put the chicken wings into a baking tray in the oven to keep warm.
Fry the sweet potatoes in a deep frying pan at 200 degrees Celsius until golden.
Put the sweet potatoes fries into the oven.
Use the rest of the marinade to make a sauce.
Pour the sauce over the chicken wings.
Make the garlic mayonnaise by getting ready made mayonnaise and mix with garlic paste and parsley.
