Here is another noodle dish I have experimented with a while ago...Sweet chilli Chicken Noodles. This dish is sweet and packed with lots of flavour. In addition, you can use whatever vegetables you want. You can add coconut for that added sweetness.
Admittedly for this dish, I did use the Blue Dragon Sweet Chilli and Garlic Stir Fry Sauce (which I don’t usually do). Sometimes It is good to take a shortcut. One day though, I will learn to make a decent sweet chilli sauce and will post it on here.
-Sweetcorn (baby sweetcorn can work)
-Red chilli peppers (optional)
I kept it really simple this time around but you can add other vegetables like mushroom, bean sprout and mange tout.
Fry the chicken in oil and garlic until golden brown.
Add the bell peppers and fry until sautéed.
Add the sweetcorn.
Add coconut milk for extra flavour.
Add the rice noodles and stir until they become soft.
Add the Sweet Chilli Stir Fry Sauce.
Serve on a hot plate.
