Avocado and Mixed Bean Salad


 




 

Here’s another healthy salad to try and it will keep you filled up. This is a good one to eat at lunchtime. I have not made a bean salad for ages so this was fun to do. There’s crunchy onions (another item I have not put into salad for a long time). I used red onion and spring onion.


As well as crunchy lettuce leaves and cucumber, there’s sweet tomatoes and soft avocado. There are various textures which complements each other in this salad. The garlic and herbs in this salad brings out the best flavour.


This is great to have for your lunch as it is light yet filling which is what you want on a summer’s day.


 

Prep: 10 mins
Serves: 4 People
Ingredients

-1 tin Mixed Beans

-1 Red Onion

-1 Spring Onion

-Cherry tomatoes

-1 Romaine Lettuce

-1 Avocado

-2 tsp garlic salt

-2 Tbsp olive oil

-1Tsp coriander

-1 tsp chives

-1 tsp parsley

-1 Tsp garlic salt

-Salt and pepper to taste


 

Instructions

  1. Chop the red onions and spring onions.

  2. Drain the mixed beans and place in the salad bowl.

  3. Cut the cherry tomatoes into halves.

  4. Cut lettuce leaves into strips.

  5. Cut avocado into chunks.

  6. Add the herbs and seasoning.
