Beetroot, Feta and Olive Salad


 



 

This salad is so colourful and packed with vitamins and flavour. Also add the fact that there is cheese in it too. It is so quick to make. Just get some cooked beetroot and feta cheese cubes (you can get a feta cheese block if there aren’t any cubes).


The other items that complement this salad are the sweet cherry tomatoes, velvety spinach leaves, sweet beetroots and the salty olives. The herbs include mint and coriander, which are the staple herbs used in Greek salads. I also used basil herb for extra sweetness.


This is a great salad to make if you are looking for something different.

 
Prep: 15 mins
Making time: 20 mins
Serves: 3 people
Ingredients

-1 pack of steamed beetroot

-1 pack of spinach leaves

-Black Olives

-7 Cherry tomatoes

-1 pack of feta cheese

-1 tsp garlic garlic paste

-1 tsp mint

-1 tsp basil

-1 tsp coriander

-1 tsp parsley

-Drizzle of garlic olive oil

-Salt and pepper to taste.

 
Instructions
  1. Wash and chop cherry tomatoes into halves.

  2. Wash and chop the beetroot into quarters.

  3. Add the Spinach leaves to the salad.

  4. Add the Feta cheese cubes into the salad.

  5. Add the black olives.

  6. Add the herbs and seasonings.

  7. Mix and then serve into bowls.
