Fried Egg and Kale


 


 

As you all know, I enjoy making a range of breakfasts on the weekend. I prefer the complex dishes but sometimes it's nice to go simple. I have eating kale quite a bit recently and I love it's sweet crunchiness against the other elements in general, especially when fried in butter.


This weekend, I had some extra kale in the Packet so I decided to have it with some fried egg. Usually I like to use Spinach so it is nice to make a change. Reason being, I liked the contrasting crunch from the kale with the soft, velvety egg. Also there is a lovely buttery taste as well.


As usual, you can garnish your egg with either parsley, coriander or chives. It just a makes the egg more colourful and invited to eat. Not to mention, added flavour.


This breakfast is great if you are in a rush and you need to go somewhere or you want you want a light fry up. Finally there are some health benefits eating an egg with kale.

 

Prep: 20 mins
Cooking time: 1 hour
Serves: 4
Ingredients

-2 eggs

-3 handfuls of kale

-Parsley

-Marjoram

-Coriander

-Garlic paste

-Salt and pepper to taste


 
Instructions
  1. Wash the kale leaves and drain them.

  2. Fry butter on a medium heat until melted.

  3. Add the garlic paste and herbs.

  4. Fry the kale leaves until sautéed

  5. Place the kale on plates and in the oven to keep warm.

  6. Add oil to the pan if dry.

  7. Fry egg on low medium heat until cooked to your preference.

  8. Serve on a plate and garnish with coriander
