Halloumi Cheese Salad


 

 

I love halloumi cheese especially fried. If you love this delicious then this is the salad for you. When you fry the halloumi cheese you get a sweet, soft and texture alone. Imagine that dynamic in a salad.

You have crunchy sweetcorn and lettuce, soft, salty olives and sweet tomatoes. Absolutely amazing. In addition, it complements all of the elements of the salad to create multidimensional flavours. You can adapt the vegetables but the star of the show is the halloumi cheese m

Serves: 4 People
Ingredients

-1 pack of rocket salad leaves

-7 Cherry plum tomatoes

-10 pitted black olives

-1 tin of Sweetcorn

-4 Romaine lettuce leaves

-1/2 pack of wild mix lettuce leaves

-1/2 pack spinach leaves

-1 pack of halloumi cheese

-1 tsp garlic paste

-1 tsp mint

-1 tsp coriander

-1 tsp parsley

-Drizzle of garlic olive oil

-Salt and pepper to taste


 
Instructions
  1. Wash the vegetables for the salad.

  2. Chop the olives into half width ways and place in the salad bowl.

  3. Chop the cherry plum tomatoes width ways and place in the salad bowl.

  4. Chop the romaine lettuce leaves into strips and place into the salad bowl.

  5. Use 1/2 pack of mix wild lettuce leaves.

  6. Chop the goat’s cheese into cubes.

  7. Drain water from the tin of the sweetcorn and pour into the salad bowl.

  8. Fry the cheese in oil on a medium heat until golden brown

  9. Add the herbs and seasoning and mix all of the contents of the salad.

  10. Serve the salad in a bowl.
