Lemon and herb Chicken wings, Baby Potatoes and Asparagus


 


 

This is another one of those quick meals you have during the week. Just seasoning the chicken in lemon and herbs. If you cover the chicken wings, it will still keep it tender and not dry out.


Having baby roast potatoes will save you peeling and chopping them up. The great thing about baby roast potatoes is that they go quite well with so many herbs such as parsley, chives, mint, tarragon and coriander. Have a go experimenting with the herbs you like and see what you come up with.


Finally, I fried the asparagus in some butter and garlic seasoning. Asparagus has a lovely nutty taste that goes well with chicken and potatoes. Then I serve it all on a plate.

Cooking time: 1 hour and 10 mins
Serves: 4
Ingredients

-1 pack of chicken wings

-1 packet of baby potatoes

-1/2 Lemon

-1 Tsp chopped garlic

-1 Tsp parsley

-1 Tsp coriander

-1 pack of asparagus

-Salt and Pepper to taste.

 
Instructions
  1. Wash the chicken wings.

  2. Place the chicken wings in a bowl.

  3. Season the chicken wings with lemon, garlic, coriander and parsley.

  4. Wash the baby potatoes.

  5. Place the chicken wings in a Pyrex dish.

  6. Place the chicken wings in the oven at 180 degrees.

  7. Place baby potatoes into the oven.

  8. Fry the asparagus in butter and garlic salt.

  9. Garnish with parsley.
