Lemon, Garlic and Barbecue Chicken Wings and Mashed Potatoes

I was in full experimental mode when I did these chicken wings and they turned out quite well. Garlic always compliments any meat especially chicken. However, lemon adds more depth to the flavour.


As for the mash potatoes, I decided to use white potatoes for a change. Despite the adjustment, I still used my butter, herbs and garlic paste. It was a well turned out dinner and very simple. This meal can be adapted in many ways.

Serves: 4
Ingredients

-Potatoes

-Chicken Wings

-Lemon

-Garlic

-Barbecue sauce

-1 tsp Garlic Paste

-1 tsp parsley

-1 tsp coriander

-1 tsp tarragon

-Salt and pepper to taste

 
Instructions
  1. Wash the chicken and season with lemon, barbecue sauce and garlic.

  2. Leave chicken to marinade.

  3. Wash and peel the potatoes.

  4. Boil the potatoes on a medium heat until soft

  5. Fry the chicken wings on a medium heat until brown.

  6. Place chicken wings in a baking tray and place in the oven at 180-200 degrees Celsius.

  7. Drain the potatoes.

  8. Add butter and garlic paste and mash the potatoes until desired.

  9. Add the coriander, parsley and tarragon.

  10. Add salt and pepper to taste

  11. Serve on a plate.
