Sticky BBQ Lamb Chops with Sweet Potato Mash and Spinach


 


 

Here’s another sticky BBQ edition. This time it is using lamb chops. This is quite a quick meal to make. Simply make the marinade and season the meat for as long as you need to. Then peel the potatoes and boil in a saucepan. This is where you would place the lamb chops in the oven.


Next, fry some spinach in butter. This adds a silky, velvety texture alongside the sweet potato. Speaking of which, I garnished the sweet potatoes with cheddar cheese just to add a savoury taste to it and it does work quite well.

Serves: 3 people
Ingredients

Lamb Chops Marinade


-BBQ Sauce (Sweet Baby Ray)


-1 Tbsp Honey


-1 Tsp Parsley


-Lamb chops



-1tsp garlic salt


-1tsp parsley


-1tsp Coriander


-1 Pack of Sweet Potatoes

 
Instructions

Create the marinade for the lamb chops.

  1. Add the lamb chops to the marinade and leave for at least 1 hour.

  2. Add the lamb chops to the Pyrex dish or baking tray.

  3. Cover the lamb chops in foil.

  4. Add to the preheated oven at 180 degrees Celsius.

  5. Peel the sweet potatoes.

  6. Place sweet potatoes in the saucepan to boil until soft.

  7. Mash the sweet potatoes in butter.

  8. Add the garlic salt and herbs.

  9. Remove the foil from the lamb chops and allow to cook.

  10. Fry spinach in butter, parsley and garlic salt

  11. Serve food on a warm plate.

  12. Garnish the sweet potatoes with herbs.
