This is a great soup to eat in the winter or early spring. Cream soups are so comforting to have during this time and appreciate the indoors so much more. This time though, I have added a few extra things like crunchy sweetcorn, delicious courgettes and silky spinach. Courgettes are great addition when fried in butter. These vegetables add more flavour and texture to the soup. The herbs such as marjoram work really well with green veg.

Ingredients
-Broccoli
-Courgette
-Spinach
-Sweetcorn
-25g Butter
-1 onion
-Chopped garlic/garlic paste
-Parsley
-Marjoram
-Coriander
-120ml double cream
-100ml vegetable/chicken stock
-Salt and pepper
Instructions
Wash and prep the vegetables.
Steam the broccoli in water and butter.
Slice the courgettes.
Fry the courgettes until sautéed
Fry the chicken breast in oil.
Add some of the broccoli and courgette into the blender.
Blend the broccoli and courgettes until puréed.
Put contents into a saucepan and add double cream.
Add the fried chicken to the saucepan
Add tinned sweet corn to the saucepan.
Add the the herbs to the saucepan.
