This is a great soup to eat in the winter or early spring. Cream soups are so comforting to have during this time and appreciate the indoors so much more. In addition, you need to boost your iron and vitamin levels during this time. I have made broccoli soup previously and the recipe is here: https://www.creativecookblog.com/post/cream-of-broccoli-soup
This time though, I have added a few extra things like crunchy sweetcorn, delicious courgettes and silky spinach. Courgettes are great addition when fried in butter. These vegetables add more flavour and texture to the soup. The herbs such as marjoram work really well with green veg.
