I love Cajun and chipotle seasoning and I used the seasoning a lot when cooking chicken. This time though, I have used it in a pasta. It was absolutely delicious in a creamy tomato pasta seasoning with Cajun, paprika and herbs. This is a brilliant pasta.
To begin with, I love a creamy pasta that has lots of sauce. In addition, the pasta looks so colourful and vibrant with the sweet red and green bell peppers, crunchy sweetcorn, green velvety spinach and earthy mushrooms and of course the tender chicken breast.
Penne is not my first choice of pasta but I will admit it does go really well with this dish. All of the ingredients combined create so many depths of flavours and textures.
I have just started creating Cajun pasta and I intend to create Cajun soup. Watch this space for many more dishes.

Cooking time: 60 mins
-1 Chicken Breast
-1/2 pack of Penne Pasta
-1 Spring onion
-2 Bell Peppers
-1 handful of spinach
-1 tin of sweetcorn
-200ml double cream
-1 tin of chopped tomatoes
-1 Tbsp Cajun Seasoning
-1 Tsp Chipotle Chilli Flakes
-1 Tsp Paprika
-1 Tsp Parsley
-1 Tsp Garlic Paste
-1 Tbsp Butter
-Salt and pepper to taste
Boil the penne pasta in a large saucepan on a medium high heat.
Wash the spring onion and mushrooms
Chop the spring onions and mushrooms
Fry the chicken breasts in a frying pan.
Drain the pasta and add to the pot with butter.
Add Cajun seasoning, chopped tomatoes and double cream.
Fry the mushrooms until sauteed.
Fry the bell peppers until sautéed.
Add the tin sweetcorn, chicken breasts, mushrooms and peppers.
Add salt and pepper.
