Egg and Mushrooms

There is a nothing like a great fry up on the weekend. It is one of my well deserved treats after a tiring week. Mushrooms and Eggs contain vitamin D. Therefore, I get an energy top up which the body needs. To give my fry ups an edge, I always add herbs for that extra flavour. I am going to try a variety of healthy fry ups, upload them and comment on the health benefits.


Prep: 15 mins

Serves: 4


- 2 medium sized eggs

- Chestnut mushrooms

-1 Tsp chives

-1 Tsp parsley

-1 Garlic Paste




  1. Chop the mushrooms into slices.

  2. Fry until sautéed and season the mushrooms with garlic paste.

  3. Add parsley and chives and keep the mushrooms warm in the oven.

  4. Fry the eggs on a low medium heat

  5. Season the egg with salt and pepper.

  6. Season the egg with parsley and chives.

  7. Serve on a warm plate with mushrooms.
