Goat’s Cheese Salad


 
 

This salad has everything. It has crunchy leaves and sweetcorn, salty olives and sweet tomatoes all in one bowl. Best of all it has mild goat’s cheese, which goes well in any salad. In addition, it is not overpowering like the other cheeses.

Adding goat’s cheese creates an extra bite to the salad And is so filling. Moreover, m has a sweet flavour that tends to go well with salads that contain goat’s cheese. This salad can be adapted in so many ways.

Serves: 4 People
Ingredients

-1 pack of rocket salad leaves

-7 Cherry plum tomatoes

-1 pack pitted green olives

-1 tin of Sweetcorn

-4 Romaine lettuce leaves

-1/2 pack of wild mix lettuce leaves

-1 pack of goat’s cheese

-1 tsp garlic paste

-1 tsp mint

-1 tsp coriander

-1 tsp parsley

-Drizzle of garlic olive oil

-Salt and pepper to taste


 
Instructions
  1. Wash the vegetables for the salad.

  2. Chop the olives into half width ways and place in the salad bowl.

  3. Chop the cherry plum tomatoes width ways and place in the salad bowl.

  4. Chop the romaine lettuce leaves into strips and place into the salad bowl.

  5. Use 1/2 pack of mix wild lettuce leaves.

  6. Chop the goat’s cheese into cubes.

  7. Drain water from the tin of the sweetcorn and pour into the salad bowl.

  8. Add the herbs and seasoning and mix all of the contents of the salad.

  9. Serve the salad in a bowl.
