Mashed Chipotle Avocado and Smoked Salmon

Previously I made avocado on toast (click here if you have missed that: https://www.creativecookblog.com/post/avocado-on-toast ). As most of you know, I really like eating this fruit for breakfast or brunch. I also love this fruit in my salads.

Now I have up levelled this snack with some smoked salmon. The chipotle seasoning in the soft avocado complements the smoked salmon. It also gives it meatier texture to your breakfast.


You could cook the salmon if you want to or you can have it uncooked. I chose to have it uncooked and seasoned with a bit of salt and pepper because I wanted to have the smoky flavour come through. Simple but fancy.

 
Prep: 10 mins
Serves: 2
Ingredients

-1 Avocado

-1 Tsp chopped garlic

-1 Tsp chipotle flakes

-1 Tsp Coriander

-Drizzle of olive oil

-Salt and Pepper to taste

 
Instructions
  1. Cut the avocado in half and deseed.

  2. Remove the flesh out of the skin.

  3. Pour some olive oil to soften the avocado.

  4. Mash until the avocado is soft.

  5. Add chopped garlic and chipotle chilli flakes.

  6. Add coriander and parsley.

  7. Mix and then serve on toast
