Piri Piri Chicken and Jacket Potato

Tonight was one of those feeling tired but don’t know what to cook nights. Even I have a brain block once in a while. Eventually, I decided to make piri-piri chicken with some piri-piri seasoning, red chopped chilli paste, garlic paste and some honey. I even got to make my own Peri-Peri sauce as well. To make the jacket potato, I put them in the microwave for 6 minutes on one side and then another 7 on the other side. Then pop in the oven to brown them at 180 degrees until the chicken is cooked. I also made a wild leaf salad to go with this simple yet delicious meal.

Ingredients

-Chicken legs

-1 pack of piri-piri seasoning

-1tsp garlic paste

-1tsp chilli paste

-1tsp honey

-2 Jacket Potatoes

-Butter


Piri-Piri Sauce

-1 pack of piri-piri seasoning

-1tsp garlic paste

-1tsp chilli paste

-1tbsp honey

-300ml water

-Cornflour

Instructions

  1. Wash the chicken.

  2. Add the piri-piri seasoning

  3. Add 1 Tsp garlic paste

  4. Add 1Tsp chopped chilli paste

  5. Add 1Tsp honey

  6. Mix and allow to marinade for 20 mins minimum.

  7. Fry in a saucepan until brown.

  8. Put two jacket potatoes into the microwave for 6 minutes with a plastic cover.

  9. Turn the potatoes over and cook for 7 minutes.

  10. Put the jacket potatoes into the oven at 180 degrees Celsius.

  11. Put the chicken into a separate baking tray and put into the oven.

  12. For the piri-piri sauce add 1 Tbsp honey into the saucepan.

  13. Add 1Tsp garlic paste into the saucepan.

  14. Add 1Tsp chilli paste into the sauce pan

  15. Add 300ml water

  16. Add 2 tsp cornflour to thicken sauce.

  17. Whisk until lumps have disappeared.

  18. Make the wild leaves salad.

  19. Serve salad in a dish.

  20. Serve chicken and jacket potato with a knob of butter, salt and pepper.
