Egg on Toast with Mushroom and Avocado Hummus



Just on a whim, I decided to see how I can be more creative with my breakfast. Using the avocado hummus that I made the previous night for dinner, I decided to use that along with egg and mushrooms. It tasted delicious and compliments avocado just as well. If you want to make it for breakfast, I would advise you to make it beforehand to save you some time.

Using the similar seasoning that I would use for mashed avocado I think helped as well. The recipe for the avocado hummus is here should you ever want to make with your breakfast, lunch or dinner:

Cooking time: 1 hour
Serves: 4


-4 Eggs

-Avocado Hummus


-2 Tbsp oil

-3 tsp garlic paste

-1 Tsp parsley

-1 tsp coriander

-salt and pepper to taste


  1. Chop the mushroom into chunks.

  2. Fry the mushrooms on a medium heat.

  3. Add garlic paste and parsley to the mushrooms and fry until sautéed.

  4. Fry the egg on medium heat according to your preference.

  5. Serve on a plate with the avocado hummus.
